Pot O’ Green Puppy Chow

Now this is the 5th day of hearing how these 2 Irish gals have a special place in our heart for St. Patrick’s Day.  It’s just one of those holidays that gets us all pumped up to celebrate our heritage and bond with our family.  We both have plans to celebrate our favorite holiday in style, and we believe that any celebration calls for some yummy snacks and cocktails.
We’ve got the drinks covered (beer, obvi…), but we wanted a nice snack that we could serve to our family and friends. This recipe is a bit more “dessert-y” than “snacky” but that’s a-okay with us.  A little chocolate is always necessary for any get together!
Pot o' green puppy chow
This mix is commonly referred to as “puppy chow” or “muddy buddies.” Don’t freak out people, you don’t actually feed your dog this (in fact…absolutely do not do that). Instead it’s just a common term for this delicious dessert!
We added a little St. Patrick’s Day flair to this traditional batch, with some green and white for a nice pop of Irish color!
Ingredients:
-9 cups Chex cereal
-1 cup milk chocolate chips
-1/2 cup smooth peanut butter
-1/4 cup butter
-1 t. vanilla
-1.5 cups powdered sugar
-Sprinkles (optional)
-m&m’s (optional)

Directions:

Measure cereal in a large bowl and set aside. Microwave the chocolate chips, peanut butter, and butter on high for 1 minute. Mix and microwave for another 30 seconds, or until smooth. Add vanilla and mix. Pour mixture over cereal and stir until entirely coated. Pour mixture a baggie or large tupperware and add powdered sugar. Shake well until all pieces are coated. Spread out on wax paper to cool. Add sprinkles or m&m’s to add some color!

This sweet concoction is seriously delicious and incredibly addicting. I could eat an entire bowl in a heartbeat, but lucky for my waistline I dug deep and found some restraint. However, when Finn saw this snack he immediately poured it into a bowl, added milk, and ate it as cereal. Yikes, that’s pretty intense if you ask me. But…hey he enjoyed it!

If you’ve never made puppy chow before, I definitely recommend it as an easy snack and dessert. It will take you less than 10 minutes to whip up a big batch…but just know that your party guests may devour it in half that time!

Fall Recipe – Pecan Pumpkin Butter Squares

Fall is by far my favorite season. The crisp air, the changing leaves, the scarves and leather boots…it all makes me so darn happy. So it should be no surprise that this fall lovin’ gal has a love for any and all things pumpkin.  Come September bring on the pumpkin beers, the pumpkin ice cream, the pumpkin lattes…I.want.it.all.
This recipe certainly satisfies my pumpkin craving that kicks in this time of year.
Pecan Pumpkin Butter Squares
This is not an original recipe. No siree, this seasonal favorite is brought to you by the good ol’ people over at Williams Sonoma. But their recipe is so darn tasty that it made it right into our family book of “favorite recipes.” It’s that good…

Pecan Pumpkin Butter Squares
Not only are these pumpkin bars delicious, but they’re incredibly easy to make. You probably have most of the ingredients on hand, and all you need to pick up is the jar of pecan pumpkin butter.  The cashier at Williams Sonoma told me the jars sell fast, so if you see one…buy it! You won’t regret it.

Ingredients

Ingredients:
-1 package of yellow cake mix; set aside 1 cup
-1/2 cup butter, melted
-3 large eggs
1 jar of Muirhead Pecan Pumpkin Butter from Williams Sonoma
-1/8 cup milk
-1 T. flour
-1/4 cup sugar
-1/4 cup butter, softened
-1 t. cinnamon

Williams Sonoma Pecan Pumpkin Butter

Directions:
Preheat oven to 350. Divide yellow cake mix, placing all but one cup in a mixing bowl. Stir the melted butter and one egg into the cake mix. Press the mixture into the bottom of a 9×13 pan. Mix the jar of Pecan Pumpkin Butter with two eggs and milk. Pour this result over the cake mix. Stir the reserved cup of cake mix with the flour, sugar, softened butter, and cinnamon. Mix together until crumbly. Sprinkle over top of the pumpkin layer. Bake for 35 to 40 minutes or until golden brown. Cut into 2″ squares.

The crumbled sugary, buttery top is by far my favorite part. You can even get really wild and put vanilla or caramel ice cream on top. Holy moley yum.
