Set up a double boiler on the stovetop. (If you don't have a double boiler, use a heat-safe glass bowl over a boiling pot of water.)
Melt the white chocolate until it's smooth. Stir constantly so the chocolate doesn't burn.
Once the chocolate is fully melted, stir in the peppermint bits.
When fully combined, take the bowl off the heat. Spoon teaspoons full of the white chocolate onto a foil or waxed paper-covered tray or cooling rack.
Place cooling rack or tray in the refrigerator (or freezer, to speed up hardening) to harden.
